Full Job Description

As Assistant Head Baker you will support and help lead a skilled team in crafting award-winning organic breads and viennoiserie, maintaining Daylesford Organic's renowned quality standards. Reporting to the Head Baker, you will oversee production, manage scheduling, and ensure compliance with food safety and quality standards such as SALSA and the Soil Association. You'll play a key role in fostering innovation, driving continuous improvement, and meeting financial targets. With a focus on operational efficiency, team development, and customer satisfaction, this role ensures the seamless delivery of exceptional products to our Farm Shops, cafes, pubs, and hotels.,

  • Support the Head Baker in leading a team of night-shift Bakers in producing a range of organic breads and viennoiserie for supply to our Farm Shops, as well as their integrated cafes and the Bamford Collection's pubs/hotels, across 7 days a week
  • Support in maintaining the award-winning quality of Daylesford Organic breads and viennoiserie
  • Contribute to the development and launch of exciting and innovative seasonal Bakery products
  • Oversee the execution of all baked products as per company specifications
  • Ensure that all Bakery preparation is completed in a timely and professional manner
  • Adhere to the organic standards as set out by the Soil Association
  • Be adaptable and responsive to the business's desire for seasonal range changes
  • OPERATIONS
  • Deputise in the Head Baker's absence
  • Ensure that all ingredients are prepared, weighed and measured ready for production
  • Supervise the team in ensuring that all food production duties are carried out with care and diligence to guarantee the production of a consistently high standard of product, along with minimal levels of wastage
  • Ensure that the Bakery team are following the correct due diligence and traceability procedures
  • Ensure that the team's tasks are completed efficiently within the timeframe given
  • NUMBERS
  • Hold full responsibility for the processing of daily orders and recipes
  • Work safely and efficiently to ensure that all daily orders are completed above the required fulfilment rate
  • Minimise wastage levels as much as possible
  • Comply with the production unit's internal audit requirements
  • Aid the Head Baker in the fulfilment of the Bakery's annual financial/budgetary targets
  • PEOPLE
  • Assist in the line management, development and motivation of the Bakery team
  • Assist with the induction and training of new team members
  • Participate in the effective communication amongst the team regarding any changes to recipes, procedures and/or operational needs, and amongst the company and other customers regarding any quality issues/shortages in the required timescales

    SALARY: 35000 - 40000 DOE HOURS: 45 Hours ( 5 shifts between Monday - Sunday ),
