Full Job Description

We are currently looking for passionate, skilled, enthusiastic individuals specialising in authentic Ghana food to join our dynamic team at Peterborough.

Within this job role your main Duties and Responsibilities will include:

Prepping for the day processing using their own unique methods in order to obtain a high level of cooking and quality produce.
Development different Ghanian menus in order to keep a fresh output
Ensuring hygiene standards are met including dating, regular temperature checks etc
Managing stock control, placing orders for original Ghanian ingredients to ensure stock availability
Managing allergens and understanding the relevant laws and regulations
Managing a team to ensure smooth and effective processing and packaging. Including scheduling and managing of days off
Managing and implementing regular cleaning rota including the double sanitisation of surfaces adhering to covid-19 regulations ensuring that premises is COVID-secure.

We are looking for individuals with at least three years of experience in the African food Section., Experience in traditional Waakye, Kenkey, Banku, Tuo Zaafi, Kontomire stew and authentic Ghana Jollof Rice is a MUST.
Ability to work with high volume processing.
Must be proficient in all aspects of food preparation.
Exceptional proven ability of kitchen management.
Confident and competent in your designated section.
Working knowledge of health & safety as well as food safety regulations.
