The Chef de Pass plays a pivotal role in the success of a fine dining restaurant by ensuring smooth communication and coordination between the kitchen and front-of-house teams, with the added complexity of managing a dummy waiter system. The Chef de Pass is responsible for ensuring that every dish is prepared, presented, and delivered to guests in a timely and organised manner. Working in a fast-paced, high-pressure environment, the Chef de Pass ensures that the kitchen's output meets the restaurant's high standards, food is accurately placed on the dummy waiter system, and any issues with timing, presentation, or special requests are swiftly addressed. What you'll be doing... Managing Order Flow

  • Organise and prioritise orders as they come in, ensuring that the kitchen prepares dishes in the correct sequence and that the dummy waiters are loaded efficiently.
  • Monitor the status of all orders, ensuring that appetisers, mains, and desserts are coordinated across different kitchen stations.
  • Ensure that the dummy waiter system is accurately loaded with the correct dishes for each table and that the timing aligns with the guest dining experience.
  • Quality Control
  • Inspect each dish for accuracy, presentation, temperature, and portion size before it leaves the kitchen.
  • Ensure that all plates are plated according to the fine dining standards and restaurant specifications.
  • Verify that special requests (such as allergies, dietary restrictions, or specific preferences) have been fulfilled correctly before dispatching the dish.
  • Timing and Coordination
  • Ensure that dishes from multiple stations are ready at the same time to avoid any delays or disruptions in service.
  • Maintain communication with kitchen staff, front-of-house staff, and the dummy waiter system operators to ensure a smooth flow of orders, especially during busy shifts.
  • Anticipate and address any delays or issues, quickly communicating with the kitchen and front-of-house as necessary to resolve problems.
  • Communication with Front-of-House
  • Liaise with front-of-house staff who manage the dummy waiter system to ensure that dishes are being delivered correctly to the intended tables.
  • Inform the service team of any changes or delays in the kitchen, including menu adjustments, out-of-stock items, or special requests.
  • Relay feedback from front-of-house to the kitchen to maintain a high level of service and quality.
  • Dummy Waiter System Management
  • Oversee the operation of the dummy waiter system, ensuring that it is functioning properly and efficiently.
  • Load food orders into the dummy waiters with precision, ensuring that plates are correctly assigned to the appropriate table.
  • Troubleshoot any issues with the dummy waiters, coordinating with technical staff if necessary to resolve malfunctions or delays.
  • Organisation and Cleanliness
  • Maintain a clean, organised, and efficient expediting area, ensuring that plates, garnishes, and utensils are readily accessible and in good condition.
  • Ensure the dummy waiter loading area is organised and free of clutter, making it easy to manage orders during service.
  • Adhere to all food safety, hygiene, and health regulations.

    2-3 years of experience working in a fine dining restaurant, preferably as an Expeditor, Line Cook, or in a similar role.
  • Experience working with or overseeing an automated food service system (dummy waiters or similar technology) is preferred but not required.
  • Strong understanding of food preparation and presentation standards in a fine dining setting.
  • Familiarity with menu items, ingredients, and cooking techniques used in the restaurant to properly manage timing and quality.
  • Excellent communication skills to effectively relay orders and special requests between the kitchen and front-of-house staff.
  • Ability to maintain composure and clear communication under pressure, ensuring service runs smoothly.
  • Keen eye for detail, ensuring every dish that leaves the kitchen is flawless in presentation, temperature, and taste.
  • Ability to quickly identify and rectify mistakes or issues with orders before they reach the guest.
  • Basic understanding of restaurant technology systems, including POS systems and automated food delivery (dummy waiters).
  • Willingness to learn and adapt to new technologies to ensure smooth service operation.
  • Strong organisational abilities, with the capacity to manage multiple orders, prioritise tasks, and coordinate between different teams.
  • Able to manage high volumes of orders and maintain accuracy under pressure.
