Full Job Description
As a Chef Supervisor at Sodexo in Merville Barracks, Colchester, CO2 7UT. You're ambitious about culinary excellence and we understand the true strength it takes to be a chef! Your position is to operationally oversee the shift to assist the Executive Head chef in delivering the service to the required specification and to motivate and supervise the chefs, assist in training programmes as directed by the Executive Head Chef/ Chef Manager You'll be providing this service for our armed forces personnel, improving their quality of life every day! What you'll do:
- To oversee the shift and make operational decisions to ensure service delivery
- To raise any service or performance concerns to line manager in a timely manner
- To manage the consumption of ingredients in line with recipe cards establishing targets, exercising economy of food, fuel and prevention of waste
- Good understanding of menu planning
- Mange recipe on Line system and ensure that menus and recipes are followed
- Deputise for the Head Chef in their absence
- Ensure that the team adhere to the correct cooking, disposal and storage of all food items as directed by the catering manager / centre manager
- Ensure and monitor that the team are accurately taking and recording temperatures of fridges and freezers, hot cabinets, serveries in line with Sodexo's Safety Management System
- Ensure that the handing over procedures and opening up and closing down procedures are compiled to, with emphasis on safety and security
- To carry out any other reasonable tasks and/or instructions as directed by management
Must have one of the following qualification's or equivalent; BSC (Catering), MHCIM, HND, City and Guild 706/1 and 2, NVQ level 2 and 3 and pose an intermediate level food safety - Previous experience working in catering operational role.
- Basic IT skills
- Experience in menu production and confident input
- The enthusiasm to develop and learn new skills
