Full Job Description

To Supervise all the Cook Chill/Cook Freeze activities that takes place in the Central Production Unit and the associated activities including transportation and delivery.To support and help the CPU staff in the cooking, processing, freezing/chilling raw materials in accordance with the strict procedures, using sophisticated high volume cooking equipment and in accordance with Health Board Food Safety Policy and all related policies, procedures and legislative requirements. To assist in developing, maintaining and promoting the highest standards of CPU service delivery and team working practices; supporting the CPU Manager in the day to day running of the department
The post holder is responsible for the training and development of all staff to ensure competence within the full range of their duties: with emphasis on risk assessment, including HACCP, health and safety, COSHH, employment law, Basic Food Hygiene and other relevant legislation, and meeting control of infection requirements. The post holder must keep abreast of the current issues, developments and researching the field of Catering, and also be competent in computer skills, Supervision of food preparation, production and distribution.
To efficiently supervise the staff within the department to maximise the efficiency of labour and equipment.
To be fully conversant and aware of the fundamental mechanics of the Cook Chill/Cook Freeze Systems.
Ensure the correct and economical use of materials and equipment.
Ensure all cooks use of standardized recipes
Ensure proper standards of cleanliness relating to food production are met in compliance with Environmental Health Officers/STS.
To be fully conversant with all Safety Regulations and Safe Systems of Work procedures.
Reporting of Mechanical Defects and needs for repair.
To assist in the Organisation of staff Rotas, annual leave and sickness cover for the staff based at the Central Production Unit.
Issuing/Requisitioning items for food production, controlling stock of raw/cooked food items, disposable and cleaning materials etc, by use of computer programs set up for the Central Production Unit., Supervision of food preparation, production and distribution.
