Join our team as a Lead Butcher and play an essential role in providing high-quality cuts of meat to our customers. As a Lead Butcher, you will be responsible for ensuring the freshness, quality, and presentation of our meats while adhering to strict food safety standards. This role requires a keen eye for detail, excellent knife skills, and a passion for delivering exceptional service., FOOD To share knowledge of the Farm and what we do when conversing with customers To champion the quality of fresh meat in store To champion a beautiful display of cuts of meat to a good standard and beautifully merchandised counter & pre pack displays with appropriate POS in line with the store plan-o-gram SERVICE Ensure every customer receives the best possible customer service To champion swift, efficient, knowledgeable and engaging Butchery service ensuring compliance to retail standards OPERATIONS Ensuring store standards for hygiene and display are met and maintained Opening/closing procedures are completed and all store due diligence Demonstrate knife skills and confidently portion poultry and previously deboned meat and full carcase breakdown To ensure tight control of stock and minimise waste & loss through strict rotation, date checking and quality checks - forward thinking to avoid issues NUMBERS To drive and improve basket spend of fresh meat by recommending different cuts, upselling and fully supporting the planned promotions To deliver against budgeted sales To follow the lead of the Lead Butcher, working closely with the General Manager and Head Chef to utilise product coming towards the end of

  • Meat Cutting Proficiency: Expertise in cutting, deboning, and trimming various types of meat precisely and efficiently.
  • Knife Handling: Mastery of using knives and other cutting tools safely and effectively.
  • Knowledge of Meat Quality: Understanding how to assess the quality and freshness of different meats.
  • Customer Service: Ability to interact with customers, take orders, and provide recommendations.
  • Food Safety: Knowledge of hygiene and safety standards to prevent contamination and ensure safe handling of meat products.
  • Inventory Management: Skills in managing stock, ordering supplies, and minimizing waste.
  • Product Presentation: Ability to display meat attractively to enhance sales and customer appeal.
  • Butchery Techniques: Proficiency in various butchery techniques, including sausage making, curing, and smoking meats.
