We are currently looking for a Restaurants and Bars Operations Director to join the team. This newly created role will be responsible for overseeing all Food and Beverage operations for our Wilde portfolio within the UK and Europe and will require travel The ideal candidate will possess a strong background in restaurants & bars, high-end, lifestyle, or contemporary hotels and have a keen understanding of the intricacies involved in hotel FOH operations - this is essential for the role,

  • Business Plan Delivery: Oversee the execution of the business plan, benchmarking, revenue projections, and GOP % levels, aligned with the overall concept strategy and F&B planning.
  • Pre & Post Opening Operations: Lead the F&B operations team through all stages of operations, from pre-opening preparations to post-opening excellence.
  • Cost Management: Identify and implement cost management initiatives in collaboration with the Ops leadership team.
  • Support F&B Budgets: Assist existing properties in achieving their F&B budget goals.
  • Quality Leadership: Conduct quality reviews per property, leading to actionable plans for continuous improvement.
  • Performance Monitoring: Provide monthly updates on business performance and KPIs, with subsequent action plans.
  • Operational Enhancement: Improve operational efficiency and quality in restaurant and bar services through innovative ideas.
  • Training and Development: Collaborate with the Wilde Brand Ambassador to train F&B teams, develop talent, and drive quality. Identify training needs and implement appropriate programs.
  • Profitability Reviews: Conduct detailed weekly reviews to identify business opportunities, enhancing profitability and guest satisfaction in collaboration with Review Pro.
  • Product Development Input: Contribute feedback on product development and advise on profitability opportunities and potential issues.

  • Pragmatic and Humble: Ego-free and practical, you're ready to roll up your sleeves and get things done, regardless of the task at hand., Senior Management Experience: At least 5 years of experience in a senior F&B role within the lifestyle segmentwith a strong track record of managing and developing teams - this is a necessity for this role.
  • Commercial Acumen: Advanced knowledge and experience in P&L and budgeting, with the ability to drive revenue and control costs effectively.
  • Systems Proficiency: High level of expertise with EPOS, reservations, payroll, stock management, and Excel.
  • Industry Knowledge: Extensive knowledge of the R&B market, with a wide network of industry contacts.
  • Culinary and Beverage Expertise: Strong background in wine, food, and cocktails, with the ability to understand and contribute to menu development across all disciplines.
  • Service Excellence: Expertise in all areas of restaurant service, ensuring high standards and adherence to all relevant health, safety, and hygiene regulations.
  • Documentation Skills: Ability to complete food hygiene documents and write comprehensive environmental health reports.
  • Personal Alcohol License: Must hold a personal alcohol license issued in England.
